Event Description
Join Anne Marie from Get Cooking! for a friendly cooking workshop where she'll be teaching you how to make a vibrant and vegan friendly Vegetable Paella!
Recipe: Vegetable Paella
- Serves: 4
Ingredients:
- 1 can chickpeas
- 1 tsp paprika (sweet/smoked)
- Pinch of saffron or turmeric
- 1 onion
- 2 garlic cloves (diced)
- 200g paella rice
- 6 spring onions or 1 onion
- 1 red pepper (diced)
- 4 small tomatoes
- 1 courgette
- 100g frozen petit pois
- 75ml white wine (optional)
- 600ml vegetable stock (or 675ml if not using wine)
Method:
- Toss chickpeas in paprika and fry with garlic and onion.
- Add chopped peppers, courgette, turmeric or saffron followed by the rice. Stir for a few minutes and add wine, followed by the stock (leave a little back).
- Cook for about 15 minutes before adding tomatoes and frozen peas and the last ladle of stock.
- Continue cooking for 5 minutes or longer until the rice is cooked (check the sides for a slight bite).
- Season with pepper and serve with slices of lemon and chopped parsley.
Pro Tip: The secret to paella is not stirring it and cooking it in an open wide shallow pan. The crust on the bottom, known as socarrat, is considered the best bit.
Equipment:
- Large frying pan
- Spatula, knife, chopping board
Hints and Tips:
- Customise your paella with any seasonal vegetables.
- Duration: 60 mins
- Online Zoom event: Join from your computer, phone or tablet (no replay available)
Originally from York, Anne Marie was brought up in a household where her mum used to conjure meals out of thin air. It showed Anne Marie that, with practical skills such as cookery, there’s no substitute for seeing somebody do it and then doing it alongside them. Anne Marie's aim with Get Cooking is to inspire people to rediscover that skill.
Anne Marie completed her BSC (hons) degree in Environmental Management & Technology back in 1995 and has always been an environmentalist at heart. Her early career in hospitality, cost sector catering and food manufacture proved invaluable in understanding how to reduce food waste and cook more sustainably.
For the last 13 years, she has been teaching people of all ages how to cook, in her home, their homes, schools, community venues, workplaces, children's centres and now online!
Preparing for the Event
For the best experience, you will need to have Zoom downloaded onto your computer. Please ensure you're connected to broadband/wifi rather than using your mobile phone connection (3G/4G).
We also recommend that pets are either calmly sitting on your lap or in another room, and any refreshments you may require are within your reach!
